我家有女初長成,身懷廚藝人不知;天生才華難自棄,一朝掌廚舉座驚!






去年整个七月在意大利北部旅游,意大利的自然美景和悠久文化历史让人流连忘返 不愿离去。意大利的美食同样闻名天下,回想起来让人舌尖生津!
意大利千年古镇Casalmaggiore,人口仅数千,剧院却有五座,包括一座古香古色的古老正规歌剧院,人文之丰富,渗入意大利人生活中每一个角落,令人叹为观止!小镇上大大小小餐馆也有几十家,尽管天气炎热、蚊虫叮咬和空调缺乏,小镇居民仍夜夜饮酒聚餐,店里店外不乏食客,美食在意大利人心中的重要地位可见一斑。
在陪伴女儿参加小镇音乐节的日子里,我们有充沛的时间去品尝小镇各个餐馆的食谱。其中Secondo piano(直译为二楼)餐馆为我第一选择,曾多次光顾,店中海鲜面为我的钟爱!
回国后,那海鲜面的美味让我回味无穷。决定凭脑中和舌尖的记忆,自己动手制作海鲜面。
佐料,四人份(ingredients,4 servings):
一个洋葱one onion(切条,cut long pieces)
几瓣蒜garlic pieces(碎片,minced)
西葫芦zucchini(几个,视大小)(切英寸大小三角块,cut into inch size wedged pieces)
西红柿tomatoes(几个,视大小)(切几大块,cut into big pieces)
一捧九层塔Basil(a bunch)
盐(salt)
黑胡椒末(ground black peppers)

大淡菜 一打(小淡菜 二打)a dozen big mussels(or two dozen small mussels)(必要,must have)
两个鱿鱼桶(切成圈状)two squid tube(cut into rings)
和/或者虾(and/or dozens shrimps)
重要点,impotent point:
海鲜洗干净,淡菜挤尽大半水(不能全挤干!!!)

烹调步骤 cooking steps:
1. 用热油爆香洋葱和一半碎蒜(add onion and some garlic into hot oil cooking pan,stir fry till browning)
2. 加入西葫芦块翻炒几分钟(add in zucchini pieces,keep stir frying for a few minutes)
3. 加入西红柿块翻炒几分钟(add in tomatoes pieces,keep stir frying for a few minutes)
4. 加盐和大方加黑胡椒,翻炒几分钟add in salt and generous amount of ground black peppers,stir fry for a few minutes)
5. 盖上锅盖至开锅(cover the pan till boiling)
6. 加入鱿鱼圈,搅拌均匀,盖上锅盖煮几分钟(add in squid rings,cover the pan and keep boiling for a few minutes)
7. 加入淡菜虾,搅拌均匀,盖上锅盖煮开(add in squid rings shrimps etc,cover the pan and keep boiling)
8. 加入淡菜后,大淡菜开锅后四分钟即可,小淡菜三分钟即可(after reach boiling,keep boiling for 4 minutes for big mussels, 3 minutes for small mussels)
9. 加入剩余碎蒜末,搅拌均匀(add in rest of the garlic pieces,mix well)
10. 关火(turn off the stove)
11. 加入九层塔,搅拌均匀(add in basil, mix well)
(意大利面分开按包装说明煮好,cook the pasta separatly according to package instructions)
将汤料覆盖在意大利面条上,撒些许黑胡椒末,摆盘上桌(place pasta sauce on top of pasta,sprinkle some ground black peppers,serve)

Ingredients 配料 (4 servings 4人份):
Toppings(盖料):
Juice of one lemon(一个檸檬汁)
1/4 c. extra-virgin olive oil(1/4 cup橄榄油)
1 clove garlic, minced(一瓣蒜,小碎块)
1 tsp. dried oregano(1 茶勺干oregano)
1 tsp. red pepper flakes(1 茶勺红辣椒薄片)
Freshly ground black pepper(新磨黑胡椒末)
1 c. cubed feta(1 cup feta奶酪块)
1 c. quartered tomatoes or halved cherry tomatoes(1 cup西红柿碎块)
1/2 c. sliced kalamata olives(1/2 cup黑橄榄片)
One chopped Persian cucumbers(一个黄瓜碎块)
Half chopped red onion(半个红洋葱碎块)
2 tbsp. freshly chopped dill(2茶勺细碎小茴香叶)
Prepare feta mixture(做盖料):
Marinate feta: In a large bowl, whisk together olive oil, lemon juice, garlic, oregano and red pepper flakes. Season with pepper and add feta, tossing to coat. Cover and refrigerate for about 10 minutes.
Into the bowl with feta, add tomatoes, olives, cucumbers, chopped red onion, and dill. Fold gently to combine.
Salmon(三文鱼):
1 lemon, thinly sliced (一个柠檬,切片)
Half red onion, sliced(半个红洋葱,切条)
1 lb salmon fillets, patted dry with paper towels(1 磅三文鱼块)
Freshly ground black pepper(新磨黑胡椒末)
Salt(盐)
Prepare salmon(烤三文鱼):
Preheat oven to 375°.
Roast fish: Scatter the sliced lemon and red onion at the bottom of a large baking dish. Add salmon fillets, skin side down, to baking dish. Season with salt and pepper and bake until opaque and flaky, 18 to 20 minutes.
To serve(摆盘上桌):
Plate salmon with lemon and red onion slices and top with feta mixture.
